Chocolate is definitely one of my comfort foods.  There is nothing better than a yummy piece of chocolate.  Throughout my journey with endometriosis, I have always looked for healthier options when dealing with cravings.  As an Endometriosis Coach, I am so happy to be able to share one of my favorite snacks that are endometriosis friendly, Chocolate covered Dates.

Dates are a great source of antioxidants, that are naturally sweet.  They are also good for our digestive systems.

What you’ll need:
– 8 to 10 pitted dates, organic
– 1 to 2 tsp of almond butter, peanut butter, or your favorite nut butter
– 1/2 cup of Lily’s Dark Chocolate Baking chips

How to make these yummy snacks:
– Butterfly the dates long way.  Then add a small amount of your nut butter to the inside. Carefully close the nut butter-filled dates and place them in the freezer for 10-15 mins.  In the meanwhile, melt your Lilys Dark Chocolate.  Remove the dates from the freezer and gently, roll them in the melted dark chocolate.  You should have a light coating on them.  Place them on a baking sheet and back in the freezer until the chocolate has hardened.
